By far our most popular quince wine on tasting days, Grandma's Favourite Liqueur Quince is an intensly flavoured quince fortified which is similar in body to traditional solera fortifieds. Definitely no short cuts with this one, our method includes a reduction not of fruit but of water similar to the method for making quince paste, prior to fermentation so we only produce around 600mL of wine for every 1kg of poached quince used. You could say it's like having sun dried quince that you can drink and it certainly will complement the best of soft cheese tasting platters.
